A Recipe to Remember - Cheese and Spinach Stuffed Mushrooms

 

Ingredients

 

12 large mushrooms, cleaned and stems removed

200g cream cheese, softened

100g cheddar cheese, grated

150g fresh spinach, chopped and sautéed

Two cloves of garlic, minced

Two tablespoons of chives, finely chopped

Salt and pepper to taste

 

Method

 

  • Preheat the oven to 200°C.
  • In a pan, sauté the spinach and garlic until the spinach wilts and the garlic is aromatic. Allow it to cool.

 

  • Combine the sautéed spinach and garlic in a mixing bowl with the cream cheese and cheddar. Add chives and season with salt and pepper. Mix until well combined.
  • Place the mushroom caps on a baking sheet, hollow side up. Spoon the cheese and spinach mixture into the mushrooms, pressing gently to fill the caps.
  • Bake for 20 minutes or until the mushrooms are tender and the cheese is golden and bubbly.
